What is Fresh Crumb Cereal Filler?

   Fresh Crumb Cereal Filler has been specially designed to enhance some traditional meat products, particularly UK sausages. It can be used in place of, or in combination with, rusk or breadrusk, which are traditionally used as cereal fillers in these types of applications.

   Fresh Crumb Cereal Filler is a traditional type of natural breadcrumb, that is manufactured from specially formulated breads where the density is adjusted to optimise texture. Once the loaves have been cooled to fix the structure of the bread, they are ground down to the required particle size and frozen.

   The ingredient declaration of Fresh Crumb Cereal Filler is: Wheat Flour, Water, Salt and Yeast. This clean, consumer friendly declaration supports the trend for “store cupboard“ easily recognised components in Food products


Advantages of Fresh Crumb Cereal Filler

   Fresh Crumb Cereal Filler provides a number of quality enhancements over traditional fillers such as rusk and breadrusk.

   Because Fresh Crumb Filler is not dried, this helps to maintain the elasticity, strength and ‘springiness’ of the bread structure. This means that when it is incorporated into a meat mix, a more pleasing open texture is achieved, with no sliminess and pastiness. Traditional type fillers, which are dried, tend to suffer degradation of their structure when re-hydrated and tend to impart a more rubbery bite to the sausage.

   When incorporated into fresh sausage, Fresh Crumb Cereal Filler retains a translucence, which helps it to virtually disappear into the meat mixture. Traditional fillers tend to lose this translucence and in some cases will colour up during the drying process making them more visually apparent.

   Finally, Fresh Crumb Cereal Filler has a neutral flavour which allows the meat and spice flavours to predominate when eating the cooked sausage. The drying of traditional cereal fillers lead to the enhancement of toasted cereal notes, which can interfere with the flavour delivery in the sausage.

   Although Fresh Crumb Cereal Filler has the ability to absorb some of the meat juices within the sausage during manufacture, storage and cooking, it can be used in conjunction with traditional fillers that act as mopping agents, particularly in ‘wetter’ sausage formulations.


What shelf life?

   The shelf life under normal storage conditions avoiding heat and direct sunlight (and temperature not exceeding 18 degrees C) is 5 days. The shelf life of an unopened box frozen, is 3 months.

   The product is packed in 20kg boxes.
