Toppings Product Range
The Chaucer Food's range contains the following products:
CH40
CH40 contains 40% vegetable oil and is particularly suited for use in recipe dishes/ready meals with a sauce or moist substrate. The high oil content of the crumb acts as a moisture barrier, and helps to maintain texture and colour. CH40 is a coarse toasted crumb with a mottled golden appearance. CH40 is formulated from wheat flour, vegetable oil, salt and yeast.
CH25
CH25 is similar in composition to CH40. It has a lower oil content giving a drier mouth-feel. It is usually used in applications where a lower total fat content is required. CH25 is a coarse toasted crumb with a mottled golden appearance.
CH01
CH01 contains no added oil and is particularly suitable for reduced fat and calorie controlled applications. CH01 is a toasted crumb with a mottled golden appearance.
CHSC20 Sweet Topping Mix
This is a CH40 crumb (as above) mixed with brown sugar and a fine dried crumb and is used as a sweet topping on products such as apple crumbles and treacle tart. The oil content is around 20%.
Black Olive Topping
This is a mixture of CH40 with black olives, basil and chives.
Cheese Topping
This is a mixture of CH40 with cheese powder and other flavouring components designed to give a rounded cheesy flavour.
Cheese & Onion Topping
This is a mixture of CH40 with cheese, dried tomato and basil.
Cream & Tarragon Topping
This is a mixture of CH40 with milk and cream powders, herb and herb extracts.
Cinnamon topping Mix
This is CH40 with cinnamon powder and sugar. It is ideal for use in apple dishes.
Garlic & Herb Topping
This is a mixture of CH40 with parsley and garlic designed to give a roasted garlic flavour with a herby background.
Indian Topping Mix
This is a mixture of CH40 with a tikka flavour complemented with mint and coriander. The appearance is enhanced by the inclusion of pitta bread pieces in the mix.
Lemon & Garlic Topping
This is a mixture of CH40 Crumb with lemon, garlic and parsley.
Lemon Pepper Topping
This is a mixture lemon oil, pepper, onion and garlic and has a particularly attractive bright yellow appearance. It is particularly suitable for fish and poultry.
Lime & Coriander Topping
This is a mixture of CH40 with lime and coriander.
Mediterranean Topping
This is a mixture of CH40 with black olives, peppers, tomato and herbs.
Mexican Topping
This is a mixture of CH40 with chilli powder and other flavouring components designed to give a characteristic Mexican flavour.
Mustard & Garlic Topping
This is a mixture of CH40 with mustard and garlic.
Paprika Topping
This is a mixture of CH40 with paprika and has been formulated to give a characteristic red appearance with a mild background paprika flavour. It can be used in a wide variety of savoury dishes.
Parsley Topping Mix
This is CH40 with rubbed parsley designed to give a green speckled appearance. It can be applied to a wide range of savoury ready meals.
Thai Topping
This is a mixture of CH40 blended with herbs, spices and other components designed to give a characteristic sweet and spicy Thai flavour. The topping has a bright orange appearance and is suitable for use in most applications.
Tomato & Basil Topping Mix
This is a mixture of CH40 with tomato and basil. The topping has an attractive red appearance and is suitable to be used with fish, poultry and most red meats.
Tomato & Herb Topping Mix
This is CH40 with tomato and a blend of herbs. It has an attractive red appearance.
